I love to cook – well to be more accurate, I love to bake! I used to want to bake a lot but when there were only 2 of us it didn’t seem to be worth it.  I’d make 12 banana muffins and 5 days later there would still be 10 left and I would end up throwing them away.  Such a waste! So when the children came home, I decided I would make the most of it and bake as much as possible.


I love baking with the kids.  They are always eager to help out in the kitchen and we have been using baking time as lessons as well, which has really helped Little Miss understand balancing, scales, reading numbers, reading recipes, why things get hot, how things change and so much more. Our favourite sweet recipe is Banana Muffins. They are so easy to make, we always have bananas in the house and they get eaten super fast!

Banana muffins. Always a winner in the kitchen and great to make with the kids. Here is a super simple recipe, guaranteed to turn out perfectly every time!




Quick and Tasty Banana Muffins

Yield: 12

Ingredients

  • 2 Ripe Bananas (mashed)
  • 2 large eggs
  • 100g Butter (softened)
  • 175g Caster Sugar
  • 225g Self Raising Flour
  • 1tsp Baking Powder Method:

Instructions

  1. Heat oven to 180C or Gas 4
  2. Measure all ingredients and mix well in a bowl (I use an electric whisk to save time)
  3. Spoon the mixture into 12 muffin cases
  4. Pop in the oven until golden on top and a skewer comes out clean (about 20 to 25 minutes)

That’s it! Super easy and the children can help with the whole thing.  They really love using the electric whisk but their favourite part is definitely licking out the bowl! Occasionally I’ll add extra things to our banana muffin mix – our favourite is chocolate chips, but it also works with mini marshmallows and toffee pieces!

    I love banana cake but we usually make a big loaf instead of muffins. These are a good recipe to try to get the kids involved though! I also love making pizzas with my kids. #foodiefriday

      I think that’s probably the reason I discovered this in the first place! Such a good way to get the kids to eat brown bananas!! x

      Oh that’s such a good idea! I should start to freeze bananas then we’ll always have them at hand!
