Cooking with kids: banana muffins and pizza

I love to cook – well to be more accurate, I love to bake! I used to want to bake a lot but when there were only 2 of us it didn’t seem to be worth it.  I’d make 12 muffins and 5 days later there would still be 10 left and I would end up throwing them away.  Such a waste! So when the children came home, I decided I would make the most of it and bake as much as possible. I love baking with the kids.  They are always eager to help out in the kitchen and we have been using baking time as lessons as well, which has really helped Little Miss understand balancing, scales, reading numbers, reading recipes, why things get hot, how things change and so much more. Our favourite sweet recipe is Banana Muffins. They are so easy to make, we always have bananas in the house and they get eaten super fast! muffins Ingredients: 2 Ripe Bananas (mashed) 2 large eggs 100g Butter (softened) 175g Caster Sugar 225g Self Raising Flour 1tsp Baking Powder Method:
  1. Heat oven to 180C or Gas 4
  2. Measure all ingredients and mix well in a bowl (I use an electric whisk to save time)
  3. Spoon the mixture into 12 muffin cases
  4. Pop in the oven until golden on top and a skewer comes out clean (about 20 to 25 minutes)
That’s it! Super easy and the children can help with the whole thing.  They really love using the electric whisk but their favourite part is definitely licking out the bowl! Occasionally I’ll add extra things to this mix – our favourite is chocolate chips, but it also works with mini marshmallows and toffee pieces!   pizza-making When it comes to a more savoury recipe, the children will choose to make pizza rather than anything else.  Occasionally we will use a pitta bread base or a pre prepared base, but at other times we will use a mix as I find that it creates a much crispier base. The children mainly get involved with putting the cheese and tomato sauce onto the pizza, and they love to cover it with  their favourite toppings.  I love these times when we are all working together to make dinner or a snack – such great family bonding time – and the house always smells incredible!

I love banana cake but we usually make a big loaf instead of muffins. These are a good recipe to try to get the kids involved though! I also love making pizzas with my kids. #foodiefriday

These would make fab after school snacks, definitely something I will be giving a go. (I’m going to give homemade pizza a go in half term)
